The sap is collected early in the spring, when temperatures get below freezing overnight and above freezing during the day. It takes approximately 40 gallons of sap to make 1 gallon of pure Wisconsin maple syrup. Nothing is added to the natural sap, only water is evaporated away, leaving pure, amazing, delicious, lick-the-plate worthy maple syrup. (And it's not just for breakfast anymore.) |

*sold out until spring 2024* Our syrup process is strictly old-school. You won't find modern pipeline, evaporators, reverse osmosis machines, forced filtering through diatomaceous earth or other modern options here. We cook in stainless steel flat pans over a wood fire; no force-filtering or pumping. Definitely more tedious but the end result is worth it. Our special dark is the end-of-season syrup with a more robust maple flavor and less sweet. Excellent for baking and for those folks who really appreciate deep maple flavor. It's in limited supply. |

Small batches - these artisan foods take time but are worth the wait! Also limited availability ... Some folks enjoy the unique maple-whiskey taste on their pancakes and waffles or even drizzled on an egg bake .... we think it's perfection while topping vanilla ice cream with a few pecans or walnuts tossed in.
